What is the best/easiest way to change an instrument for the entire score?

Here's my situation: I have a score for baritone vocalist, piano and SATB chorus. The arranger wants to change make the baritone line into a saxophone part and the choral parts into string quartet but keep all the notes the same. I thought this would be fairly simple to do (minus editorial things to make the parts make sense for these instruments) but I can't find a way to do this from the beginning of the score. I must be missing something obvious.

Simple. Select the 1st measure of Baritone.
Goto Home/Instruments/Change. Select Woodwind/Sax(whichever).
Same routine to convert your SATB into string 4tet (one staff at a time).
