There is no 'Other' offered within my version's Home>>Bars drop-down. Only apparent option there is to actually add more bars, which is, of course, not what I want to do.

That sequence would add bars to the score, not multirests. Instead of "Other", you should read "Add Multiple or Irregular Bars".

In Sibelius, you don't do anything to get multi-rests. Sibelius automatically displays a multi-rest instead of a sequence of empty bars if ribbon tab "Layout" -> "Breaks" -> "Show Multirests" is enabled.

By default, "Show Multirests" is DISABLED for the Full Score, and ENABLED in Dynamic Parts.

You need to look at the difference between a SCORE and a PART. They are not the same in Sibelius. It treats a single instrument part as a SCORE. If you want to see how Sib will present a PART, select a bar and press w.

Also, if it's for a grand staff instrument (like piano) you will only see multirests if BOTH staves are resting.
