Though you can invoke the option to have a non-transposing score (as it seems that you have), parts are transposing by default. So you haven't "selected something without knowing it" and there is nowhere you have "gone wrong".
It's hard to imagine a situation when a player of a Clarinet in Bb (or in A or Eb) would want to read from a non-transposed part, but if that's what you really want, you will have change the clarinets to be "Clarinet in C".
It is an available instrument: so, with nothing selected, invoke an "Instrument Change", choose "Clarinet in C" from the instrument list, and when you get the blue active cursor click to the left of the beginning of the stave, and the whole stave will change to "Clarinet in C".
You'll have to so this for each stave in turn (assuming by clarinet quintet you mean 5 clarinets, not clarinet plus string quartet). You can double click and edit the name if you don't want to show "in C", but the result will be non-transposed parts which you (for some strange reason) want (even though you say you are playing a transposing clarinet).
