Just because I always forget that you can't have cross stave notes without a two-staff instrument...

Having already entered notes and specified certain specific beat pattern exceptions—which it seems I will have to redo if I copy and paste—is it possible to convert two staves into a single two-staff instrument without otherwise altering the music therein?

The simplest thing to do is to add a new 2-staff instrument, then select all the notes in each of your current staves and copy into one of the staves in the new instrument. Once everything is copies you can delete the original staves.
