It seems I can only choose number of staves by specifying an instrument, or adding an instrument-specific staff to an existing score, when I just want, Art of the Fugue style, 3 staves. I'm exporting this to a DAW eventually, and don't want to specify an instrument--other than, maybe, electric piano with an extra staff. I don't care the look of a grand staff, with a solo staff above it--though that can work if thats the only way to do it! Thanks. I promise to not ask this question twice!

You can add any number of extra staves to an existing instrument. Press I, select the staff you want to add to in the right pane then use the buttons in the middle to add staves above and/or below.
