Hi, how can I refresh the Quick Start Menu so that it remembers all the files I recently worked on? It doesn't seem to see most of them.

That might depend on how full the recent documents list is. This function is extrememly unreliable and starts to fall apart after a few hundred scores. Never, ever rely on it.

Try clearing it (button at the bottom of the File->Recent list.
