How do I control the number of syllables in a word in text. If a word

appears with 2 syllables in the score how do I make it one syllable?

I think we need more context to be able to understand your question.

Are you talking about lyrics?

If you want a lyric word not to be broken into syllables, then do not type a space between the syllables.
