By putting in exactly the text and symbols you showed. If you're using Sibelius 7 Sounds it should even play back!

Cresc./Dim Playback

Play tab>Plugins>Plugins>Playback

Ps The problem with the plugin I have found is that regular dynamics dont work after its used. Its been suggested you have to write in ~C11, 127, on the note following the cresc, or dim.
