My dal segno (and Coda) symbol seems very big. How do I make it smaller?

Any advice is very appreciated.

If you use those symbols in a Text Object (rather than as a Symbol), simply change the font size of the text object.

But I don't have the dal segno symbol in my text styles.
And by the way I don't know how to move text styles into the score.
If I for example click on "To coda" my cursor turns purple. I can then click in the score and I only get a little vertical line where I can write whatever I want - but the "To coda" doesn't appear.

Its for enlarging symbols, so when you get to that step, just make it smaller--and it seems much more complicated than Robins method, but nevertheless might be of use.

The way to add a Segno symbol in a Text Object is to create a Tempo Text object at the start of a bar, then, while in text input mode, right-click and choose the Segno symbol from the context menu, or use the equivalent keyboard shortcut (Ctrl-Shift-4 on Windows). The tempo text object can be scaled to any font size on the Text tab.

Do you know where I can see other short cuts for other symbols like coda etc?

Short-cuts for text entry are usually listed in the right-click context menu during text entry for the relevant type of text object.
