I'm currently copying a piece composed in 2010 which asks me to draw the beams of quaver, semiquaver, demisemi etc ... horizontally and as a straight line.
I tried multiple things like using symbol of a half bar rest on the top of the hidden beam but it is not satisfactory.
Does anybody of you know how I could solve this?
By now I'm using the Plantino fond (the default one), I have just started so let's say that the deadline could be in a couple of months. The piece has three movements, it's extremely complex, notationally speaking, so it will require a lot of time anyway.
Yes, presume you mean flags not beams. I would ask the client to change this to normal flags.
You can edit the symbols that Sibelius uses for the various flags to be whatever you like. It takes a bit of time and you need to be careful to exactly replicate the interdependencies that Sibelius has between the various symbols, or you'll get bits of stems sticking up or down past your flags.
(To clarify: As an example: the '32nd flag up' (Sibelius's name) is not made up of three symbols, but of an 'Extra flag up' symbol on top of a '16th flag up' symbol that must be offset 0.75sp down. The 'Extra flag up' must be oriented to hang from the midline.)
Provided you keep carefully to this scheme, you should be okay. Your first task is to find a symbol that will be the right size and shape for the beamlets.

I will ask him if he is keen on changing the assignment to a normal flag.
I will attend a course that will provide me with all I should ever know in Sibelius and I will ask the teacher to explain me how to create this.
I am sorry I cannot open your attachment, Safari downloads a text file with nothing inside instead ... But in theory I could also create the symbol and attach it to a hidden flag.
Or could I modify the flag only for this document so that it looks like what I need?
Do I risk to put everything out of place in the Sibelius fonts settings?
If you've not hardly started, then I would export a house style from my file and import it into yours. If you were nearly done, then I think I would re-do the work in your file from scratch, to avoid other changes from the house style.
But I would not be happy with the beam as it is, I think it needs some tweaking. It will be more obvious when printed at high resolution.

By now thank you very much, Jeremy, I'll see how to implement that because the composer has a contract already with a publishing house and I think he will not accept something that is not really looking good!
If there is a publishing house involved, I'd urge you (and the composer) to use the house style of the publisher. Ask them. If they're a decent one, the style almost certainly won't involve beamlets, so you won't have to do it. Everyone's a winner!

I apologize for my late answer!
I think I found the right symbol and way to do that:
in Symbols (Z) I look for '8th flag up', I press 'edit' and change the main symbol with the 'half rest' or 'whole rest' one. For 16th and 32th I just have to pay attention to which symbol use for the main symbol and then I just add the rest.
