If you cannot extract Parts (Sibelius First, right?), you can save the score under a new name and then delete all instruments except for the 2nd Violin. Next you can reformat the score, so it looks more like a part. (Bigger staff size, different paper size and so on.)

Sib 6 First supports dynamic parts, so you do not need to do all that.

Just open the part by using the Part dropdown on the toolbar, so that the part is the currently active score. Then print it. You can print all parts as well.
